Most people separate the peel from garlic, cut it and keep it to cook immediately or use it in making vegetables, soup etc., while Deepshikha Jain advises not to do so. According to the nutritionist, after peeling and cutting the garlic, it should be kept for at least 10 to 15 minutes, that is, after cutting, give garlic a rest of 10 to 15 minutes and then use it to make vegetables etc.
Why should this do this?
Regarding this question, nutritionist says, garlic contains some compounds like Aphilin and Sulforaphane. These compounds give you many benefits simultaneously. Especially sulforafen has some extent cancer fighting properties. Apart from this, garlic is beneficial for health due to these compounds.
Now, when you cut the garlic and keep it to cook immediately, by doing this, the asalin and sulforafen are deactivated. At the same time, after leaving for some time before cooking, the amount of asalin and sulforafen in garlic increases and remains intact during cooking.
